Summer is here. The weather is quite nice, the bright sun is shining our home, a bit hot but not as hot as asian countries. Nothing to do in this summer, so my kitchen became my sanctuary to spend my time by cooking and baking :).
From Sisca Soewitomo dimsum recipes book still, this time I choosed fried bao (fried pau) since I'm often make steamed bao. Actually, even this bao's named fried bao but it didn't deep fried. The way it fried same as gyoza, I only brushed oil on the pan, then after two sides of bao are golden brown then add water to boil it. The taste is good, because it was slightly fried and boiled, so it made the bao a bit crispy, and when you bite it you can feel the crunchiness from the bao's skin. But don't worry, inside the bao still soft and tender, the crunchy only from the skin.
So.....I think better we try it together........yummmm....

Fried Bao (Pau Goreng)
Untuk: 12 potong.
Bahan:
Isi:
2 sdm vegetable oil
1 sdt minyak wijen
3 siung bawang putih, cincang
1 buah dada ayam tanpa tulang, cincang halus
2 lembar sawi putih, iris halus, peras airnya
2 buah jamur shiitake segar, iris
1 sdm saus tiram
1 sdm kecap manis
1 sdt garam
1/2 sdt merica bubuk
2 sdm tepung maizena
1 sdm irisan daun bawang
Kulit:
Bahan A:
250 gram tepung terigu protein rendah (Belzy -- I used all-purpose flour)
1/2 sdm ragi instan
150 ml air
Bahan B:
150 gram tepung terigu protein rendah (Belzy -- I used all-purpose flour)
50 gram gula halus
1 sdt baking powder
50 ml air
60 gram mentega putih (shortening)
Pelengkap:
Saus sambal botolan
Cara Membuat:
1. Isi: panaskan minyak goreng bersama minyak wijen. Tumis bawang putih hingga harum, angkat. Campur dengan ayam cincang, sawi putih, jamur, saus triam, kecap manis, garam, merica bubuk, tepung maizena dan irisan daung bawang, aduk rata.
2. Campur bahan A: tepung terigu dengan ragi instan dan air. Buat adonan hingga kalis. Istirahatkan selama 30 menit hingga mengembang.
3 Campur bahan B: tepung terigu dan gula halus, baging powder dan air, aduk rata. Masukkan adonan A dan mentega putih, uleni hingga kalis.
4 Bentuk adonan memanjang seperti lontong, potong menjadi 12 bagian, bulatkan. Ambil satu adonan, isi dengan isian secukupnya, bulatkan dan pipihkan.
5. Gunakan wajan pipih, panaskan 2 sdm minyak goreng. Tata Pau, masak hingga matang kedua sisinya. Masukkan 150 ml air dan matangkan hingga Pau berwarna kecokelatan, angkat.
6. Sajikan hangat dengan saus sambal botolan.
